Tuscan Beef Stew

Craving comfort food?  I made my version of beef stew for the family last weekend and everyone loved it! Heart and satisfying beef stew is the perfect cozy meal on a cold day!  True comfort food with an Italian twist...complete recipe at end of post.

Assemble all of your ingredients

Brown beef and set aside.  Saute veggies in pot that beef was browned in until lightly browned and caramelized.

Balsamic vinegar, red wine and fresh thyme added to the mix.
Serve over mashed potatoes. 

Tuscan Beef Stew
2 pounds good quality stew beef
3 tablespoons olive oil
3 tablespoons red onion, diced
3 carrots peeled & rough chopped
3 stalks celery, chopped
2 cups dry red wine (the kind you like to drink, not the "cooking wine")
1/4 cup Balsamic Vinegar
6 sprigs fresh thyme (fresh makes all the difference)
1 can Italian style stewed tomatoes
Kosher salt and pepper to taste

In large saucepan on medium high heat, heat olive oil until hot.  Add the vegetables and saute 10 minutes, stirring occasionally.

Remove veggies and set aside.  In same pot cook beef til brown on all sides.  Add back veggies to pot.

Add the tomatoes, thyme, salt, pepper, wine and balsamic vinegar.

Stir and simmer on low/simmer for about 2 hours or until beef is tender. Stirring every 15 minutes.

Serve over mashed potatoes.  Enjoy!
